Apricot Slaw

10 dried apricots

½ orange

2 green onions

2 c shredded cabbage

1 TBsp chopped mint

1 TBsp chopped parsley

¼ c chopped walnuts, toasted 

Dressing

2 Tbsp corn oil

1 TBsp lemon juice

1 tsp sugar

1 tsp salt

¼ tsp black pepper

½ - 1 ½ tsp cream

 Chopped walnuts for garnish

Soak apricots in water for 30 minutes. Drain apricots and cut into small pieces.

Peel and cut the orange into small pieces. Chop the green onions and mix together with the orange and apricots.  Toss these with 2 forks into the cabbage, herbs and chopped nuts. 

Whisk the dressing ingredients.

Add enough dressing to cabbage mixture to coat ingredients. 

Refrigerate salad for 20 minutes or longer before serving. 

Garnish with additional chopped walnuts before serving.
