Sweet and Sour Chicken Wings

2 lbs chicken wings

2 TBsp wine vinegar

5 TBsp oil

1 TBsp soya sauce

1 clove garlic, crushed

2 TBsp orange marmalade

1 TBsp honey

1 TBsp lemon juice

Salt and pepper

 

Clean and dry the chicken. Split the chicken wings into 3 parts and discard the tips.

Combine remaining ingredients in a bowl or re-sealable plastic bag and place chicken in the marinate.  Marinate for 1 hour, turning every 10 – 15 minutes. (Keep the chicken in the fridge while it marinates.)

Preheat the oven to 350F.

Spray a 9 x 13 baking dish with cooking spray.  Add the chicken and sauce to the dish.

Cover the dish and cook for 45 minutes, turning chicken occasionally.  Remove covering and cook for an additional 15 minutes. (Make sure chicken is cooked to 165F.)

Serve with carrot and celery sticks and your favourite vegetable dip.

Note:  You could easily switch and cook chicken legs in this recipe.
