Mandarin Orange Cake

 1 (15.25 ounce) package yellow/golden cake mix

1 (11 ounce) can mandarin orange segments with their juice

4 large eggs

¾ cup vegetable oil

1 tsp orange extract

 Icing:

½ c butter (113g)

2/3 c cocoa

3 c icing sugar

1/3 c milk

1 tsp vanilla

 Cake

Preheat the oven to 350°F.  Grease and flour 2 round 8” pans.

Combine cake mix, mandarin oranges with juice, eggs, oil and orange extract in a large bowl; beat with an electric mixer until smooth. Pour batter into the prepared pans.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 to 35 minutes. Set aside to cool. Ensure cakes are completely cool before frosting.

Prepare frosting.

 Frosting

Melt butter. Stir in cocoa. Alternately add icing sugar and milk, beating to spreading consistency. Add a small amount of additional milk, if needed. Stir in vanilla.

Makes 2 c of frosting.

Spread a thin layer of frosting over the top of the bottom layer. Center the second layer on top, ensuring it is even. Frost the sides and top of cake. It’s okay to lick your fingers. This frosting is sooooo good!
